Anthony's Grandmother's Nut Cake

eggs, separated

cup plus 1 tbsp. sugar
1
cup finely chopped walnuts
1
tablespoon cake meal
1/2
teaspoon ground cinnamon
1/2
teaspoon grated rind of orange
1/2
teaspoon salt
1/4
cup powder sugar


Grind walnuts and set aside. Beat egg whites until stiff and refrigerate.

Beat egg yolks until foamy, gradually beating in sugar.

Mix walnuts with cake meal, salt and rind. Add to egg yolk mixture. Fold in egg whites.

Grease tube pan. Bake at 350 degrees for 45 minutes. Test for doneness. Let cool in oven with door open.

Evenly sprinkle the powder sugar and serve.
