Sea Scallops with Ginger Infusion
Fresh ginger has a very distinct flavor and is a great combination with sea
scallops. It has been a very successful appetizer since the day I introduced
this dish on a Mother’s Day menu. The use of vermouth gives this dish an
outstanding touch.
Serves 5
3 tablespoons fresh ginger paste
2 teaspoons fresh lemon juice
salt and pepper to taste
pinch of sugar
6 tablespoons ghee
15 sea scallops
1/3 cup dry vermouth
1. Combine ginger, lemon juice, salt, pepper and sugar. Season the scallops
with the mixture. Rub each scallop with a bit of ghee.
2. Heat the remaining ghee in a large nonstick skillet over high heat.
3. Sear the scallops in a single layer, causing them to caramelize—2 minutes
on each side.
4. Add vermouth to the skillet and cook out the alcohol—1 to 2 minutes.
5. Serve the hot scallops in vermouth.
